This Geisha - a variety famous for it’s incredibly high-quality taste profile, floral notes, elegant acidity and sugary sweetness - is one of the rarest coffees that Alejo produces at Volcan Azul. Wrapped in a special box, this is the perfect gift for the coffee lover in your life. 

Processed as warm anaerobic natural, an experimental processing technique similar to his other competition winning lots, this coffee is of exceptionally high quality with a beautiful signature taste profile. 

Volcan Azul is located in Central Valley on slopes of Poás Volcano, after which the farm takes its name (Blue Volcano).

Alejo belongs to the 5th generation of farmers taking care of Volcan Azul. Because of the knowledge that has been passed down throughout the generations- they have a lot of experience and tradition in producing high quality specialty coffee. 

The farm has currently planted 40 different varieties of Arabica coffee trees, which gives the farm unique flexibility and diversity in terms of the flavour profiles it can offer. Each variety is separated and processed individually, either as washed, red/yellow honey or natural.

The skill of matching the right varieties with different microclimates on the farm and later with the right processing method is key to Volcan Azul’s success.

It doesn’t come as a surprise that their coffees have won numerous awards and competitions.

Process

Before harvesting the cherries are being often measured for their ripeness using refractometers. Once they reach peak of their sweetness the cherries are manually picked and brought to the on-farm wet mill. There the cherries are washed, imperfections removed and the cherries are put into closed fermentation tanks.

During the fermentation, the temperature is maintained above environmental levels in order to accelerate the process.

Once fermentation is complete, the cherries are transported to raised beds and slowly dried over the course of next weeks. When dry, the husks are removed in the on-farm dry mill and final green coffee beans are bagged and prepared for shipment.
